I had the opportunity to check out the Viet Bistro in Summerlin on a recent lunch outing with a friend. Viet Bistro is located off W Lake Mead Blvd in a strip mall with a host of other restaurants and businesses. I was there during lunchtime, business was brisk and the large parking lot was teeming with cars.
Summer roll with shrimp
These had your traditional filling of fresh lettuce,carrots and rice noodles with shrimp but it was missing a key ingredient; an herb. Where is the mint, thai basil or cilantro? Vietnamese food is characterized by the addition of fresh herbs and these rolls would’ve had a nice zing to it if it had included herbs. The accompanying peanut-hoisin sauce combo was good; nicely balanced and a good complement to the rolls.
Pho: Sliced eye round steak and beef meatball
This was a good pho. The broth was nicely seasoned and had a rich meaty and sweet onion flavor which could only have been produced by a slow stew. The steak was lean and the meatballs were standard fare.
Spicy Tofu and Vegetable Noodle Soup
A tasty and flavorful dish. Delicately spiced broth with a nice hint of lemon grass. The tofu was firm and the vegetables cooked al dente so they had a nice firm crunch. A clear winner and a must try especially for vegetarians and vegans.
Banh Mi: Specialty roll with barbecue pork and sliced pork
Viet Bistro served their Banh Mi on what looked like a miniature baguette but actually turned out to taste like a regular sub roll. A proper baguette is key to a Banh Mi and would have made a difference in this case. The accompanying fresh and light rice vinegar carrot-daikon slaw on the sandwich added a nice balance to the cured meats.
A good venue especially for lunch. Fast, friendly and efficient service. Great prices as almost all entrees are under $10.
